"Two different products can be distinguished, based on the method of processing. Black pepper (Hei Hu Jiao / 黑胡椒): the green fruit is collected and dried directly in the sun. White pepper (Bai Hu Jiao / 白胡椒): the fruit is collected when it turns red, soaked for several days in water, removed from the sarcocarp, and dried in the sun." (Bensky, pg. 704)
